Savoy cabbage belongs to the cruciferous family. In the first year of its growth, a short stump is formed, resembling a spindle in shape. A loose head of cabbage is subsequently formed on it. In the second year, the height of the trunk reaches 1.5 meters, the vegetable blooms and forms seeds.

Breeding history

This cabbage was first bred in the Italian fields (County Savoie), and its oldest ancestor is wild cabbage, which is still widespread in North Africa today. Initially, the Savoyard was eaten by ordinary people, and since the 18th century this vegetable has been appreciated and loved by aristocrats.

In appearance, Savoy cabbage resembles white cabbage, only its leaves are not smooth, but bubbly (a distinctive feature), very similar to corrugated paper. Heads of cabbage are light, loose, inside they have light yellow or white leaves on the cut, and green outside. Their shape can be conical, round or slightly flattened.

The color scheme of this vegetable includes many shades of green:

  1. from light green to emerald;
  2. there are varieties with a silvery gray and bluish tint;
  3. blue-green;
  4. light yellow and yellow-green.


An elegant, light and lush Mediterranean vegetable has the following structure:

  • Productive organ - a head of cabbage, mostly round in shape, weighing from 1.5 kg to 3.5 kg.
  • Leaves - large, thin, without coarse veins, bubbly or corrugated, alternating fit.

  • "Mila 1". Early ripening variety, excellent yield, dark green leaves with a gray waxy bloom, large heads of cabbage, can gain weight up to 3 kg; grows well in heavy soils.
  • "Julius F1". An ultra-early variety, leaves of a delicate light green color, with dense planting, the heads of cabbage grow medium-sized (up to 1.5 kg), with a rare planting this variety is able to give a high yield, the weight of the head will be about 3 kg.


It is best to plant Savoy cabbage in open, sunny areas, on fertile light soils. In the fall, it is advisable to calcify the site, in the spring add ash, compost there, you can also add complex mineral fertilizer.

Planting is carried out by seedlings in early May, with 5 or 6 true leaves, at a distance of about 50 (or 40) cm from each other. Further care consists in weeding, loosening and watering. During the season, it is advisable to add organic fertilizing at least 2 times (it is better to make an infusion). They begin to harvest as they ripen, the early varieties - in August, some even in July, the later ones ripen only by October. It is not worth delaying the harvesting for too long so that the heads of cabbage do not begin to crack. Late varieties that will be put into storage must be removed in dry weather and at freezing temperatures.

Attention: when cutting, it is advisable to keep the 4 outer leaves to prevent the inner leaves from breaking off, as they are very delicate.


Early varieties for storage are not completely suitable; for this purpose, late and mid-late varieties are perfect, for example: Lacemaker, Uralochka, Valentina and others.

To properly lay this cabbage for storage, you will need to follow some rules:

  • There is no need to water the cabbage the day before harvesting.
  • Choose good heads of cabbage, no rot, dry a little.
  • The storage room should be no more than 5 degrees Celsius and 90% humidity, that is, a cellar or basement is suitable.
  • You can choose the most convenient storage method: in wooden boxes, in a pyramid or hanging.

Savoy cabbage makes wonderful fillings for pies, rolls and dumplings.
