Potatoes are one of the most popular products in the kitchen, loved by housewives for their versatility and ease of preparation. On the basis of this vegetable, recipes for delicious and healthy dishes are created. Sometimes it happens that there are more peeled potatoes than was needed during cooking, and it is a pity to throw away the product. There is only one thing left - to leave it until next time. But not every housewife knows how to properly store this vegetable without letting it go bad. Knowing the rules and terms of storage of peeled potatoes, you can significantly reduce the time spent at the stove by making a harvest from the evening the next morning or even a couple of days in advance. We will tell you how much you can store peeled potatoes and how exactly.
Why do potatoes darken and spoil after peeling?
Within a couple of hours after peeling the peel, the peeled potatoes begin to become covered with a dark bloom.
The reason is the substances tyrosinase and tyrosine, which are contained in the tubers of this product. On contact with air, tyrosine, initially colorless, oxidizes, creating a black-brownish substance. Vegetables treated with nitrogenous fertilizers lose their appearance fasterthan those grown at home without the use of chemicals.
Do not worry that the browning process can be harmful to health - the negative consequences are reflected only in the appearance of the potato. Heat treatment destroys tyrosinase. This explains why a cooked vegetable, unlike a raw one, does not darken.
General storage guidelines
First you need to rinse the product and peel it with a knife or potato peeler. Eyes and various damages are carefully removed. Older potatoes should be given more attention when peeling - together with the shell, the upper part of the root crop should be removed.
Green potatoes should not be eaten... It contains substances that are dangerous to the body. You should get rid of such a vegetable immediately.
The tuber should not be cut into small pieces in advance. It would be more correct to do this immediately before starting culinary activities. Compliance with this rule will allow you to preserve most of the useful properties.
